Really enjoyed my visit to Permission Whiskey. I had a glass of cava and the one-tier charcuterie board, both of which were excellent. Beautiful presentation, quality ingredients, great service, and a welcoming atmosphere. I’ll definitely be back
I was excited to visit after seeing an online recommendations. I saw that it wasrecently voted one of the best whiskey bars in the country. I will say it’s a gorgeous bar: beautifully lit, with a stunning wall of beautifully lit whisky bottles . Every design detail felt intentional and refined. The person who greeted me at the door was also lovely and set a great first impression. When I sat down at the bar, the menu immediately impressed me. The selection was exceptional, and I was so excited to dive in. Unfortunately, the service didn’t match the setting. The bartenders felt inattentive. One in particular seemed determined to have as minimal interaction with me as allowed by his job description, actively avoiding eye contact. Admittedly, I was glancing at my phone at times to read the digital menu, but even when I made it a point to put it on the face down out of my hand and make clear I was ready, it still took a while to be acknowledged. When I was addressed, the interactions were curt a very noticeable difference compared to what other guests were receiving. When I asked if they had blood orange, I got a quiet, one-word “no”. No follow-up questions, no offers of alternatives, and no mention of specials or similar options. That kind of engagement is something I’ve come to expect from cocktail bars of this caliber, and it was disappointing to see it missing here. Because the service was lacking I decided not to indulge in the menu and opted for a quick and simple Japanese Highball. Based on the service, I don’t think I experienced Permissions at its best, and unfortunately, I can’t say I’d recommend it or plan to return.
I normally am someone who usually will venture to bars that are more you can catch a sporting event with sound or as long as the music is not too much of a distraction but a place like Permission was not in my Bingo card but I did not mind being there though it was my 1st time checking the place out Though they are more a cocktail bar with additional things you can't find in other cocktail bars, I am more of a beer drinker though I only drink local beers but I did not mind the environment & the staff that I did get to interact made me feel welcome despite I was not so sure if I fit the vibes because I tend to dress more casual like wearing SUC Shirts from Screwed up Records and Tapes but wore pants just to make sure What stood out was the lighting & the types of bottles they had shown in the shelves for those who are into Whiskey, Bourbon & or any type of hard liquors, like I said I am more into local brews but that particular night this was not my only stop, but I would want to venture out again though I needed to keep in mind that parking can be the tricky issue
I don’t know why it’s taken me this long to write a review for this place! I’ve been coming here since it opened and it is still my favorite cocktail bar in Houston. It’s where I go for any and all special occasions or when I just want a perfectly crafted cocktail made by people who treat you better than family. Whiskey is their niche but there isn’t a cocktail they can’t make beautifully and they have the BEST espresso martinis in town. Fully researched. I can’t say enough truthfully positive things about permission and their entire staff! 100/10! No notes!
My drink of choice is whiskey on the rocks with a splash of water. This establishment offers a full variety of whiskey and other liquor. It was a true delight to read through their full whiskey menu. I am knowledgeable about whiskey and bourbon. The bartender (wish I caught his name) was also knowledgeable about whiskey, thus we enjoyed a full exchange of our knowledge and experiences. Service was impeccable. The bartender truly made us feel like his only customers. In addition, the bartender was thoughtful. He mentioned a 24 hour restaurant within walking distance when we left at closing time. We were not able to enjoy Permissions food menu. The atmosphere was upscale without a snooty vibe. Music was upbeat yet not too loud. We could easily converse. The bathroom was clean. The upscale vibe was even reflected in the bathroom! Highly recommend this establishment. Excited to return. Thankful I found the place on Google.

Beyond the top-notch service, the atmosphere is awesome, they’ve got a ton of cocktail options, and the most whiskeys I’ve ever seen. The ceviche is pretty good too, and their mixologists definitely know their stuff. Don’t miss out on their carajillo – it’s delicious!
